If you follow me on Instagram you may have seen my post about Sweet Street Chewy Marshmallow bars.
But if you don’t, I have to tell you they are the best Rice Krispies treats I have ever tasted! (Check out their other desserts here too!) And they are Certified gluten-free and free of GMO’s and additives.
They have a unique rich flavor and are soft and chewy.
I just happened to buy one when we were having dinner at Dos Coyotes (my fave Mexican restaurant).
When I ate it I instantly wanted another one.
They aren’t super cheap but I had to have more.
I went to front counter and bought another one to take home.
I wanted the kiddos to try it.
I wish I could have gotten a video of my son Andrew when he first tasted it.
It was priceless!
He loves food so he takes his food tasting very seriously. (I call him Chef Andrew because he likes cooking and baking so much.)
He took a bite of the Sweet Street Chewy Marshmallow bar and as he chewed he threw his head back, rolled his eyes and said slowly and with much enthusiasm “That’s the best Rice Krispies treat I have everrrr tasted.” 😂
I had told him it was and he didn’t believe me. He didn’t know “what the big deal was”. (Now who’s the boss?! Mom knows her Rice Krispies treats!)
So Andrew and I set out to figure out how to make a copy cat version at home.
And I think we succeeded!
We read the ingredients on the Sweet Street label and they were pretty straight forward and standard.
But we did find a couple of key differences.
Vanilla, browned butter and sea salt!
That was it!
That was the delicious unique flavor I was tasting.
So, we decided we would follow the same old time tested Rice Krispies treat recipe you usually find on the Kellogg’s cereal box and just add a couple of little twists to it.
6 cups of Rice Krispies cereal
3 tablespoons of butter (not margarine because we need to use browned-butter for this knock-off)
4 cups of mini marshmallows
1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
2. Add KELLOGG’S RICE KRISPIES cereal. Stir until well coated.
3. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool. Cut into 2-inch squares. Best if served the same day.
Now to make the copy cat version:
We melted down 4 tablespoons (instead of 3TBS) of butter and simmered it a little longer than usual to brown it.
Then we added 1 teasooon of vanilla before adding the marshmallows.
Make sure you brown the butter before adding the vanilla.
If you add the vanilla before it’s browned you won’t know when it’s browned because the vanilla turns it brown instantly. (We did this on our first attempt. Oops!)
Then we added 5 cups of marshmallows (to make it extra chewy) and melted them very slowly.
Next we poured in the Rice Krispies cereal.
As we mixed in the cereal we sprinkled in just a pinch of sea salt. (add salt to your taste preference)
Once everything was mixed we spread the Rice Krispies treats into a greased (we use olive oil spray) 9 x 13 casserole dish.
Last we added some whole mini marshmallows and another tiny pinch of sea salt sprinkled over the top.
We were amazed at how much it tasted like Sweet Streets!
